Foodie Wednesday: Simple Pancakes
Would it be an ego trip to say I think my pancakes are the best? Haha.
Well these are just some basic fluffy, but not to thick pancakes that I make all the time.
Please I'm sure everyone has these ingredients in there kitchen so you have no excuse to be using pre-made box mix stuff.
Ingredients
1¼ cups flour
2 tsp. baking powder
2 tbs. sugar
A good pinch of salt
1½ cups milk
1 egg
2-3 tbs. oil
Nothing special from this point. Toss it all in a bowl and mix just enough to combine the mixture. Do not over mix. Who cares if there are some lumps. I don't.
Let your mixture sit for about 5 minutes just to let all the ingredients settle.
Now if you have a griddle I recommend you use it. I find it just cooks the pancake much better since it's more even heat.
If you have a griddle turn it to 350-375 You'll have to judge. You want it hot but not too hot.
For frying pans have it about medium-medium high.
Now the size of your pancakes are fully up to you. I make mine a lil bigger then a CD and get about 6-7 pancakes out of it.
When you pour your batter onto your cooking surface don't touch anything. You'll know its time to flip when bubbles start to come to the surface and the edge is very slightly cooked. Flip it. When the uncooked side hits the pan you will see the pancake rise. I'm always amused by this part. Then let it cook for about half the time it cooked on the other side.
Then take it off and plate. Simple right.
I like to serve mine with butter and syrup. Though it is also good with powdered sugar and fruit.
Jams like strawberry are good. Pecans and syrup. Cinnamon and sugar is great and of course for the kids or just young at heart. Whipping cream and fudge.
Also don't be scared to just mix tasty bits straight into your batter.
